2 cups biscuit / pancake mix
2 ounces Island Boost
1 ¼ cups milk
Oil for griddle / non-stick pan
Beat egg, add milk and Island Boost. Stir in pancake mix and stir until lumps are mostly gone. Let sit for a few minutes while you heat up a griddle or pan on medium heat. Lightly grease the pan. Pour pancake batter. Watch for the bubbles to pop through the top and when the tops begin to look dry, flip the pancakes over and cook for one minute.
If cooking for a crowd, place cooked pancakes onto a cookie sheet in a 200 degree oven and cover with moist paper towels to keep pancakes warm and tender. When all the pancakes are cooked, bring to the table and serve with butter and maple syrup…or use Island Boost as your pancake sauce.
